New owners hope to
rekindle guests’ love affair Jack and Becky Kelsch, new owners of the Springbrook Inn in Caledonia, say they are eager to restore the restaurant to what it has historically been famous for, great food at a reasonable price. Throughout the past fifty years, the Springbrook Inn restaurant has been synonymous with Caledonia itself, in many respects putting the small Livingston County town on the map and drawing numerous visitors out of Rochester to the country for dinner. "The Springbrook Inn has enjoyed a love affair with the people in this area," commented Jack Kelsch, adding that the couple wants to restore that relationship and bring the restaurant back to its original popularity. Jack Kelsch has worked in and around the restaurant business since he was fifteen years old. He gained a love of cooking from his grandfather who was the first to widely distribute Kingsford charcoal in stores. "I’ve always had a passion for food and I’ve dined in some of the finest restaurants," Kelsch said. Kelsch says Executive Chef Bill Ames has prepared a scrumptious menu of homemade cuisine that includes prime rib, steak, and pan-fried pecan crusted trout. Coincidentally, Ames’ parents were married 50 years at the Springbrook Inn. Ames was the chef at the Magnolia Inn in Asheville, North Carolina before recently returning to his native home in Albion, NY. Chef Ames introduced his menu to several invited guests at a special grand opening on June 6, 2006 held for local business customers, compliments of the Kelsch’s. The Springbrook Inn is open Tuesday through Sunday for lunch and dinner and hopefully this summer will offer a Sunday brunch. In the future, the couple also would like to renovate the upper floor of the Inn and eventually reopen it as a bed and breakfast.
